Bubble & squeak is the perfect winter warmer and should be on everyone’s Boxing Day menu. This nostalgic dish is a wonderful way to use up leftover veggies and mash. We love ours with a runny Rich Yolk egg.
  • Serves:


  1. Melt the butter or drizzle the olive oil in a non-stick pan over a medium heat. Add the onion and slowly brown. Once cooked add in your garlic.
  2. Add the veggies and cook for around 5 minutes.
  3. Once cooked break the mashed potato up and mix everything together in the pan; pushing it all down so that the mixture covers the base of the pan and cooks evenly.
  4. Allow the ingredients to catch slightly on the base of the pan before turning and doing the same again. The term ‘bubble and squeak’ comes from the bits of potato that catch in the pan, so be brave and let the mixture colour.
  5. Turn the heat down and get another frying pan. Add some oil and fry your St. Ewe eggs until your desired consistency.
  6. Cut your Bubble & Squeak into wedges and serve with your egg on top!
