First, and most importantly choose your favourite egg from the our colourful range; is it a Rich Yolk, Super Eggs, Hen Picked, Original or Grand kind of a day?
It's really important to use eggs that are at room temperature and not straight from the fridge. This helps to prevent the shell from cracking.
Pop your egg into a pan of COLD water that comes just to the top of the egg. Too little water and the egg will cook unevenly; too much and it will take too long to come to the boil. Putting eggs straight into boiling water can shock them and the shells can be prone to crack.
As soon as the water is at a rolling boil, set your timer. 3 minutes for a medium egg, 4 minutes for a large egg. Allow an extra 30 seconds for really fresh eggs.
Remove the eggs from the water and place into your favourite egg cups. We adore Cornishware stripy blue cups. The eggs should have lovely firm whites and oozy, runny yolks, perfect for dipping in the soldiers. Sprinkle with salt and pepper
