Treat Mum to an effortlessly elegant brunch with our Mother’s Day Egg Flight – a delightful mix of soft-boiled St. Ewe Rich Yolk eggs, silky crème fraiche, and vibrant toppings like smoked salmon, Vadasz's Super-Beet Kimchi, and creamy avocado. This simple yet sophisticated dish is bursting with colour, flavour, and indulgence—perfect for making her feel extra special.

Instructions

  1. - Step 1Boil & Chill: Bring a saucepan of water to a gentle boil. Carefully lower in the eggs and cook for 6 minutes for dreamy, jammy yolks. Once done, transfer them to an ice bath and let them chill for a couple of minutes before peeling.
  2. - Step 2Plate & Prep: Arrange the eggs on a serving plate and add a generous dollop of silky crème fraiche to each one.
  3. - Step 3Flavour Magic: Top the first egg with smoked salmon and fresh dill, the second with Vadasz’s vibrant super beet kimchi, and the third with creamy cubed avocado.
  4. - Step 4Season & Serve: Sprinkle with a pinch of salt and pepper, garnish with extra herbs if you like, and serve immediately.
