Blueberry and Almond Butter Baked Oats by Jenna Hope

Serves: 6 People

Start the day right with these nutritious baked oats made with St. Ewe Free Range Eggs, almond butter, banana, and blueberries. A protein-packed, make-ahead breakfast perfect for busy mornings!

Instructions

  1. - Step 1Preheat the oven to 170°C.
  2. - Step 2Mash the banana with the almond butter and then whisk in the St. Ewe Original Large Eggs, vanilla extract, maple syrup and almond milk.
  3. - Step 3In a separate bowl, combine the oats, baking powder and salt.
  4. - Step 4Pour the wet mix into the dry mix and stir well.
  5. - Step 5Next, stir through half the blueberries, keeping some back for the topping.
  6. - Step 6Pour into a greased baking tin and then top with the extra berries.
  7. - Step 7Bake in the oven for 35-40 minutes and then finish off under the grill for 2 minutes to get a gorgeous brown colour.
  8. - Step 8Serve and enjoy!

  • 2 Original Large Egg
  • 200 grams Oats
  • 150 grams Blueberries
  • 1 Banana
  • 80 grams Almond Butter
  • 1 tsp. Vanilla Extract
  • 2 tsp. Maple Syrup
  • 350 ml Almond Milk
  • 1/2 tsp. Baking Powder
  • pinch Salt
