Salmon Frittata by Jenna Hope

Serves: 6 People

For those days when time is short but you still want something nourishing, we’ve teamed up with Jenna Hope to create this delicious Salmon & Vegetable Frittata; ready in just 10 minutes! Made with St. Ewe Original Large Free Range Eggs and rich in omega-3 to support cognitive function, this recipe is the perfect balance of flavour and nutrition. Whether it’s a quick breakfast, a brain-friendly lunch, or a speedy dinner after a long day, this frittata has you covered.

Instructions

1. Heat the oil in a pan. Then add the sliced onions and leave to cook until

translucent.

2. Add the sliced peppers and cherry tomatoes and cook down with a pinch of

salt and pepper for 2-3 minutes. Next, add the spinach.

3. In a bowl whisk together the eggs, mixed herbs and salt and pepper. Then

pour over the vegetables and cook for 3-4 minutes over a medium heat.

4. Add the salmon on top and then finish off under the grill for 3-4 minutes.

5. Enjoy!

  • 8 Original Large Egg
  • 100 grams Cooked Salmon Shredded
  • 1/2 White Onion Sliced
  • 4 Cherry Tomatoes Roughly Chopped
  • handful Spinach
  • 1 Red Pepper Sliced
  • 1 tsp. Mixed Herbs
  • pinch Salt
  • pinch Black Pepper
  • 1 tsp. Extra Virgin Olive Oil
