
Salmon Frittata by Jenna Hope

Instructions
1. Heat the oil in a pan. Then add the sliced onions and leave to cook until
translucent.
2. Add the sliced peppers and cherry tomatoes and cook down with a pinch of
salt and pepper for 2-3 minutes. Next, add the spinach.
3. In a bowl whisk together the eggs, mixed herbs and salt and pepper. Then
pour over the vegetables and cook for 3-4 minutes over a medium heat.
4. Add the salmon on top and then finish off under the grill for 3-4 minutes.
5. Enjoy!

- 100 grams Cooked Salmon Shredded
- 1/2 White Onion Sliced
- 4 Cherry Tomatoes Roughly Chopped
- handful Spinach
- 1 Red Pepper Sliced
- 1 tsp. Mixed Herbs
- pinch Salt
- pinch Black Pepper
- 1 tsp. Extra Virgin Olive Oil
