Boxing Day Ham, Mushroom & Egg Muffin

Turn your Boxing Day into a delicious celebration with our indulgent Boxing Day Ham, Mushroom & Egg Muffin, made with St. Ewe Rich Yolk eggs. This recipe combines leftover honey-roasted ham and pan-fried mushrooms with the warmth of a toasted English muffin and a perfectly poached egg. Paired with a cup of tea, this festive breakfast will be a Boxing Day treat, whether you’re gathering with family or savouring a quiet moment to yourself.

Instructions

  1. - Step 1Bring a large pan of water to the boil. Drop in 4 eggs and simmer for 4-5 minutes for a runny yolk. Lift out carefully with a slotted spoon to drain the water.
  2. - Step 2Whilst they are cooking, fry your mushrooms in a medium to high pan with a drizzle of oil and season.
  3. - Step 3Toast your muffins and butter.
  4. - Step 4Top your muffins with ham, mushrooms and your poached egg. Stick the kettle on, make your favourite brew and enjoy!

  • 100 grams Honey Roasted Ham
  • 1 handful Mushrooms
  • 50 grams Yeo Valley Butter
  • pinch Salt
  • pinch Black Pepper
