Brain Boosting Herby Omelette

Serves: 1 Person

Made using St. Ewe’s Super Eggs, this recipe is packed with Selenium and Omega-3 to nourish the brain and the blend of herbs is great for promoting diversity for your gut. Just 2 Super Eggs contain 45% of the recommended daily intake for selenium… It’s time to get cooking.

Instructions

  1. - Step 1Heat a pan with a drizzle of olive oil. Then, slice the spinach and finely chop the herbs.
  2. - Step 2Add the spinach to the pan. In the meantime, whisk the St. Ewe Super Eggs in a bowl and season with a pinch of salt and pepper. Add half the chopped parsley and dill. Whisk until the herbs are well-combined.
  3. - Step 3Pour the egg mix into the pan and cook for 3-4 minutes, pulling back the edges and allowing the raw egg to fill the sides.
  4. - Step 4Next, add the rest of the parsley and dill before folding the omelette. Cook for a further 1-2 minutes.
  5. - Step 5Plate up and top with chopped chives and an extra crack of black pepper.

  • 20 grams Spinach
  • handful Dill Roughly Chopped
  • handful Parsley Roughly Chopped
  • pinch Salt
  • pinch Black Pepper
  • handful Chive Finely Chopped
