Brain Boosting Herby Omelette

Instructions
- - Step 1Heat a pan with a drizzle of olive oil. Then, slice the spinach and finely chop the herbs.
- - Step 2Add the spinach to the pan. In the meantime, whisk the St. Ewe Super Eggs in a bowl and season with a pinch of salt and pepper. Add half the chopped parsley and dill. Whisk until the herbs are well-combined.
- - Step 3Pour the egg mix into the pan and cook for 3-4 minutes, pulling back the edges and allowing the raw egg to fill the sides.
- - Step 4Next, add the rest of the parsley and dill before folding the omelette. Cook for a further 1-2 minutes.
- - Step 5Plate up and top with chopped chives and an extra crack of black pepper.
