Cici's Pancakes

Serves: 4 People

Fluffy, golden pancakes with a subtle peanut butter twist. CiCi’s Pancakes are quick to make, family-friendly and perfect for lazy mornings or a last-minute brunch win. Recipe in collaboration with Paul Ainsworth.

Instructions

  1. - Step 1Combine all ingredients in a bowl, except the butter and whisk together. (large eggs, self-raising flour, oat milk, seasalt, peanut butter, and vanilla).in a bowl, except the butter and whisk together.
  2. - Step 2Over a high heat, melt the butter in a small frying pan. Once the butter is brown and nutty, add a ladleful of the batter. Leave it to cook for 2 mins, then flip onto the other side and cook for a further 2 mins.
  3. - Step 3Remove when your pancake is golden brown. Stack on a plate to keep warm and repeat.
  4. - Step 4To serve, Cici and I like to fold into quarters. Top with ingredients of your choice, slice bananas, raspberries and a dollop of Greek yoghurt – or keep things classic with lemon and sugar.

  • 2 Original Large Egg
  • 160 grams Self Raising Flour
  • 210 ml Oat Milk
  • 1 pinch Sea Salt Flakes
  • 25 grams Crunchy Peanut Butter
  • 1/2 tsp. Vanilla Extract
  • 1 tsp. Unsalted Butter
  • 2 Banana Sliced
  • 100 grams Raspberries Sliced
  • 50 grams Maple Syrup
  • 50 ml Lemon Juice
  • Granulated Sugar
