Serves: 2 People

A deep-fried poached egg might sound fancy, but it’s easier than you think. Paul Ainsworth shows you how to master this crispy-yet-runny egg delight at home.

Instructions

  1. - Step 1Start with 2 poached eggs (see alternative recipe), then chill in ice cold water for 1 - 2 mins.
  2. - Step 2Whilst they are chilling, heat a pan of oil to 180°C.
  3. - Step 3Separate 2 Original Large eggs and keep the whites in a bowl ready for coating.
  4. - Step 4Dry off your poached eggs on a cloth to remove excess water, then coat in flour, egg white, and panko.
  5. - Step 5Deep fry for 1 minute until golden brown and crispy.
