Emma's Frittata by Paul Ainsworth
Serves: 4 PeoplePaul and Emma will make this gluten free dish most weekends for breakfast or brunch. It is the perfect treat for enjoying after a morning bike ride or beach walk. Paul and Emma use up whatever is in their fridge and suggest using chopped roast chicken thighs as a lovely alternative to chorizo. If you are working to a budget, then frozen cocktail prawns are a great option too. Feel free to mix it up and tag us in your creations!

Instructions
- - Step 1Preheat fan oven to 180 degrees.
- - Step 2Take a large ovenproof frying pan and heat 1 tablespoon of the olive oil over a high heat. Add the chopped chorizo and cook all over for 2-3 mins. Add the prawns and fry for a further minute, making sure the prawns are cooked and covered in the lovely red chorizo oil.
- - Step 3Remove the chorizo and prawns from the pan and transfer to a plate. Return the pan to the heat, add 2 tablespoons of the olive oil, the onion and smoked paprika and cook for 2 mins.
- - Step 4Add the peppers, mushrooms and tomatoes and continue cooking for a further 3 mins. Now add the spinach and allow to soften. Check the seasoning, then add the chorizo and prawns.
- - Step 5Beat your eggs, then pour them into the pan and stir.
- - Step 6Now place the mozzarella around the pan, pushing into the mixture. Transfer to the oven and bake for about 12 mins until the eggs are set. The will continue to cook when they come out of the oven.
- - Step 7To serve, finish the top of the frittata with the crumbled feta, torn basil and coriander and drizzle the remaining olive oil.
- - Step 8Place in the middle of the table and get stuck in!
Top Tip - Paul and Emma Ainsworth love to eat this with some added pizzaz like guacamole, a dollop of soured cream, sriracha or Frank's Hot Sauce.

- 9 Rich Yolk Egg
- 4 Tbsp. Extra Virgin Olive Oil
- 130 grams Chorizo Chopped
- 200 grams Prawns
- 1 White Onion Finely Chopped or Sliced
- 1 tsp. Smoked Paprika
- 1 Red Pepper Sliced
- 1 Yellow Pepper Sliced
- 150 grams Mushrooms Roughly Chopped
- 13 Cherry Tomatoes Chopped
- 120 grams Spinach Cooked
- 100 grams Mozzarella Chopped
- 80 grams Feta
- 6 Basil Leaves Shredded
- 1 handful Coriander Roughly Chopped
- pinch Salt
- pinch Black Pepper
