Smoked Salmon, Spinach & Egg Christmas Muffin

Serves: 4 People

Treat yourself to a luxurious Christmas breakfast with our Smoked Salmon, Spinach & Egg Muffin, made with St. Ewe Rich Yolk Opulent eggs. Finished with a drizzle of homemade hollandaise, this festive dish is a sophisticated way to celebrate. Make your Christmas morning memorable with this irresistible breakfast!

Instructions

  1. - Step 1Bring a large pan of water to the boil. Drop in 4 eggs and simmer for 4-5 minutes for a runny yolk. Lift out carefully with a slotted spoon to drain the water.
  2. - Step 2Whilst they are cooking, sauté your spinach in a medium to high pan with a knob of butter and any preferred seasoning. We love garlic, salt & black pepper!
  3. - Step 3Toast your muffins and spread them with butter.
  4. - Step 4Make your hollandaise – see our recipe.
  5. - Step 5Stack your muffins with smoked salmon, sauteed spinach and top with poached egg.
  6. - Step 6Drizzle your hollandaise over the top and serve. Who said Christmas was all about the turkey?

  • 100 grams The Cornish Figshmonger Smoked Salmon
  • 4 English Muffin
  • 50 grams Yeo Valley Butter
  • 1 handful Spinach
  • 1 Garlic Clove Finely Chopped
  • pinch Salt
  • pinch Black Pepper
