Smoked Salmon, Spinach & Egg Christmas Muffin

Instructions
- - Step 1Bring a large pan of water to the boil. Drop in 4 eggs and simmer for 4-5 minutes for a runny yolk. Lift out carefully with a slotted spoon to drain the water.
- - Step 2Whilst they are cooking, sauté your spinach in a medium to high pan with a knob of butter and any preferred seasoning. We love garlic, salt & black pepper!
- - Step 3Toast your muffins and spread them with butter.
- - Step 4Make your hollandaise – see our recipe.
- - Step 5Stack your muffins with smoked salmon, sauteed spinach and top with poached egg.
- - Step 6Drizzle your hollandaise over the top and serve. Who said Christmas was all about the turkey?
