Smoky Chilli Shakshuka with Rich Yolks
Serves: 2 PeopleBold Bean Co bring the heat, Rich Yolks bring the golden glow and Jason’s Sourdough is there to scoop every last bit. A brunch worth getting out of bed for.
Instructions
- - Step 1Finely slice the red onion and red pepper. Warm a little oil in a large frying pan over medium heat and cook the vegetables until softened and fragrant.
- - Step 2Stir in a generous pinch of salt and a good shake of paprika, coating the vegetables evenly.
- - Step 3Add the Bold Bean Co smoky chilli beans to the pan and stir to combine. Let everything simmer gently for a few minutes until the flavours meld and the sauce thickens slightly.
- - Step 4Using the back of a spoon, create small wells in the mixture. Crack the Rich Yolk eggs into the wells, spacing them evenly around the pan.
- - Step 5Reduce the heat to low, cover the pan with a lid and cook until the eggs are set to your liking - runny yolks work eggcelently here!
- - Step 6Lightly toast the slices of Jason’s sourdough until crisp and golden. Serve alongside or tucked underneath the shakshuka to scoop up the sauce. Enjoy!
