Waldorf Salad with Egg Mayo
Serves: 4 PeopleA fresh twist on a classic, this Waldorf salad is paired with creamy Super Egg mayo for added protein.
Instructions
First up, make your Super Egg mayo:
- - Step 1Bring a pan of water to the boil.
- - Step 2Drop in 4 eggs and boil for 8 mins.
- - Step 3Peel off the shells, and drop the eggs into a food processor.
- - Step 4Add mayonnaise, 20g of Dijon mustard and lemon zest. Blitz to preferred consistency.
For the dressing:
- - Step 1Mix 1 Super Egg, white wine vinegar, remaining Dijon mustard and olive oil, and blitz in a food processor until you have formed your dressing.
Note: Free to get creative here and use up any other ingredients in your fridge or cupboards!
Now assemble your salad:
- - Step 1Spread your super egg mayo onto a plate.
- - Step 2Slice your salad ingredients and apple, then build as desired.
- - Step 3Drizzle your dressing over the top, sprinkle your walnuts and enjoy!

- 1 Lettuce Sliced
- 1 Celery Sliced
- 1 Apple Finely Chopped or Sliced
- 100 grams Smoked Ham
- 50 grams Walnuts
- 50 grams Mayonnaise
- 30 grams Dijon Mustard
- pinch Lemon Zest
- 1 tsp. White Wine Vinegar
- 2 Tbsp. Extra Virgin Olive Oil
- pinch Black Pepper
- pinch Salt
