Our Christmas Morning Bagel Station features St. Ewe Rich Yolk eggs cooked scrambled or fried, with Jolly Hog bacon, creamy smashed avocado, The Cornish Fishmonger’s smoked salmon, and cream cheese.
Instructions
- Pre heat your oven to 180 degrees.
- Lightly oil a non-stick tray then lay the bacon over in a single layer. Bake for 10-15 mins. Using tongs, flip the bacon halfway to ensure it is cooked evenly and the fat is crisp around the edges.
- Whilst the oven is warming up, smash your avocados in a bowl. Add salt, pepper and chilli flakes or paprika to season.
- Cook your eggs. For scrambled eggs, heat oil and butter in a pan over a medium to high heat. Whisk your eggs in a bowl, then pour into the pan. Continuously move your eggs around until they are cooked to your preference.
- Toast your bagels, plate up your smoked salmon, spread your cream cheese.
- It’s time to enjoy! And don’t forget to stick the kettle on.
