Here’s a twist on a traditional Boxing Day brunch. Use up your left-over Christmas ham and cheese, to make these super delicious, easy-peasy quesadillas.

  1. Break the eggs into a bowl and whisk until combined. Season with salt and pepper.
  2. Take a saucepan and place over medium heat. Add the butter and melt, then add the egg mixture. Cook slowly until you have soft, just scrambled eggs. Take off the heat and turn the egg out into a bowl to stop them from cooking.
  3. Lay out 4 tortillas and divide the egg and ham evenly between them.
  4. Sprinkle each with cheese and a dash of hot sauce if using. Top each with a final tortilla.
  5. Take a large frying pan and place over medium heat. No oil is required. Then one by one, dry fry the tortillas.
  6. After 2-3 minutes check the underside of the tortilla, which should be crisp and golden. Gently flip over and fry on the other side for a few minutes, then slide onto a chopping board and cut into quarters. Eat whilst hot.
