As an alternative to the usual breakfast suspects, why not have a go at this deliciously tasty dish, created by Chris Eden of the Driftwood Hotel at Portscatho. Using brioche rather than ordinary bread adds a sweetness and lightness to the dish.

Instructions

  1. Break the eggs into a wide mixing bowl and add the milk, pinch of cinnamon, lemon zest and a few drops of good vanilla essence or the seeds from a vanilla pod. Beat all the ingredients together.
  2. Place the slices of brioche in the bowl and allow them to soak up the mixture.
  3. Melt a knob of butter in a frying pan over a medium heat, then add the slices of brioche to the pan. Fry each slice, turning until each side is golden brown and the mixture is set.
  4. Pop onto a plate, sprinkle with icing sugar, and eat while still warm.
