Melt the butter in the microwave or a pan, then whisk the wet and dry ingredients separately and then together in a bowl until smooth. Pour into a jug.
Chill in the fridge for 30 minutes
Put a frying pan over a medium heat with a little butter. Once sizzling pour in enough batter to make the pancakes the size you would like.
Cook until bubbles start to appear on the surface, then flip your pancake and cook the other side.
Serve pancakes with your choice of topping. We love blueberries, caramelised oranges or strawberries with toasted nuts, drizzled with lots of maple syrup.
