Put the dry ingredients in a large bowl together with a pinch of salt. Combine the egg, milk and maple syrup in a jug and then slowly add to the dry ingredients, whisking until you have a smooth batter.
Heat a drizzle of oil in a non-stick pan over medium heat and ladle 2 or 3 small rounds into the pan. Cook for 1-2 mins until bubbles appear on the surface, then flip over and cook for a further 1 min until they puff up. Do this in batches.
Serve in a stack, with extra maple syrup, cream or crème fraîche
