Ever want to know what to do with all the higgledy-piggldy leftovers in your fridge? An egg can turn the simplest of ingredients into a hearty and nutritious meal for the whole family in under 20 minutes.

  1. Take a pan, a drizzle of olive oil, and place over a medium heat to fry off your onion until transparent.
  2. Depending on what you have in your fridge add the potatoes and meat, then keep adding your ingredients one by one, ending with the vegetables that cook the quickest to keep their colour. In ours we have left the spinach until the end to keep all the goodness locked in as long as possible.
  3. Season and add in your smoked paprika and garden herbs.
  4. Preheat your grill to a medium heat.
  5. Whisk up your eggs and pour the mixture over the whole pan covering the ingredients as much as possible.
  6. Sprinkle with cheese and place under the grill until golden brown. This makes a fantastic meal at any time of the day and is really high in protein to keep you feeling fuller for longer.
