  1. Preheat the oven to 180°C and grease muffin tin, or line with parchment or muffin cases.
  2. In a large bowl, whisk together the eggs, cottage cheese, salt, pepper and any herbs you may have chosen to add.
  3. Then, add in all of the chopped vegetables, spinach and cheese and give it another good mix
  4. Divide the mixture evenly between the muffin cases, filling each almost to the top.
  5. Cook in the oven for around 20 minutes, or until a utensil inserted into the middle of the muffins comes out clean and the muffins have visibly puffed up.
