Instructions
- Bring a large pan of water to the boil. Drop in 4 eggs and simmer for 4-5 minutes for a runny yolk. Lift out carefully with a slotted spoon to drain the water.
- Whilst they are cooking, sauté your spinach in a medium to high pan with a knob of butter and any preferred seasoning. We love garlic, salt & black pepper!
- Toast your muffins and spread with butter.
- Make your hollandaise – see separate recipe.
- Stack your muffins with smoked salmon, sauteed spinach and top with poached egg.
- Drizzle your hollandaise over the top and serve. Who said Christmas was all about the turkey?
