Instructions

  1. Bring a large pan of water to the boil. Drop in 4 eggs and simmer for 4-5 minutes for a runny yolk. Lift out carefully with a slotted spoon to drain the water.
  2. Whilst they are cooking, sauté your spinach in a medium to high pan with a knob of butter and any preferred seasoning. We love garlic, salt & black pepper!
  3. Toast your muffins and spread with butter.
  4. Make your hollandaise – see separate recipe.
  5. Stack your muffins with smoked salmon, sauteed spinach and top with poached egg.
  6. Drizzle your hollandaise over the top and serve. Who said Christmas was all about the turkey?
