Apple cake is a firm family favourite and really symbolises the change in seasons. Utilising the extensive variety of apples that are grown in the UK with a wonderfully heady mix of warming spices. This cake can be eaten cold or is truly scrumptious warm, with lashings of double cream or homemade egg custard – perfect for that weekend treat.

  1. Preheat the oven to 180°C/gas mark 4.
  2. Butter and line a 7 inch/18cm round cake tin.
  3. Mix and sift the mixed spice with the flour.
  4. Pop all the ingredients, except the apple, into a large bowl and beat together for 2 minutes until well mixed.
  5. Add the small, diced apples and stir gently into the batter.
  6. Spoon the cake batter into your prepared tin and arrange the apple wedges on the top in a pretty patten.
  7. Sprinkle the demerara sugar all over the top of the cake.
  8. Bake in the pre-heated oven around 55 minutes, or until a skewer inserted in the middle comes out clean.
  9. Allow the cake to cool slightly before turning out on a wire rack. Serve warm or allow to cool completely before slicing and tucking in.
