Instructions

  1. Melt the butter in a pan or microwave
  2. Split your yolks into a separate bowl from the whites
  3. Put yolks into a bowl over gently simmering water
  4. Add vinegar to yolks and start to whisk until they become fluffy and pale
  5. Gradually add the melted butter to thicken (if it begins to split, remove from the heat and add a touch of cold water to the mixture).
  6. Once it makes a nice thick mixture, add the remainder of the ingredients (Dijon, lemon zest & juice, salt and pepper) - mix this through
  7. You can serve straight or leave it to cool to room temperature for up to an hour.
