Indulge in a festive favourite with this luxurious Eggnog, made with our Rich Yolk Luxuriously Large eggs for an extra creamy texture. This recipe combines rich egg yolks, golden caster sugar, whole milk, double cream, and a generous splash of brandy for a velvety, decadent drink. Finished with a hint of freshly grated nutmeg and fluffy, sweetened egg whites, this eggnog is perfect for festive gatherings or a cosy night in. Serve it chilled or warm, and for an extra special touch, blow torch the top for a caramelised finish.
Instructions
- Separate the egg yolk from the whites
- Whisk the egg yolks in a bowl with 100g of the caster sugar until the mixture is pale yellow and thick
- Stir in the milk, double cream, and the alcohol. You can add a little grated nutmeg as well
- Using an electric whisk, whisk the egg whites until foamy and opaque. Add the remaining 50g of sugar and whisk the egg whites until soft peaks form when the whisk is removed
- Combine all the ingredients and chill. Serve warm or chilled!
- For a jazzy finish…. Blow torch the top to serve.
