Naughty Nonna’s Rich Yolk Sort-of-Shakshuka

This is bold, soulful comfort cooking at its best. Sweet, slow‑softened peppers and onions melt into a deeply spiced tomato sauce, gently warmed with harissa and aromatic spices, before butter beans from Bold Bean Co. are folded through for richness and body.

On top, golden‑edged Rich Yolk fried eggs with soft, yielding yolks bring everything together - ready to be broken, mixed and scooped.

It’s the kind of dish made for lingering: perfect for a lazy brunch, a generous lunch or an unfussy supper shared around the table. Serve it piled high on a platter, with toasted bread and sharp pickles on the side, and enjoy the simple pleasure of big flavours, good textures and hands‑on eating.

Instructions

  1. - Step 1Heat the oil over a medium heat in a stainless‑steel pan. Add the onion, peppers and salt, and cook gently for 8–10 minutes, stirring occasionally, until the vegetables are soft and sweet.
  2. - Step 2Lower the heat and add the garlic, paprika, cumin and coriander seeds. Stir for around 30 seconds until fragrant, then add the tomatoes and harissa paste. Simmer for 15 minutes, until the sauce has thickened, then stir through the butterbeans and keep warm.
  3. - Step 3While the sauce simmers, heat a generous glug of oil in a frying pan. When hot, add a handful of fresh herbs and fry briefly until crisp. Crack in the eggs and fry until cooked to your liking, scattering over a little more fresh herb as they cook.
  4. - Step 4Spoon the hot sauce onto a large platter and top with the fried eggs. Season to taste and finish with extra herbs and plenty of pickles. Serve with toasted bread for scooping.

  • glug Extra Virgin Olive Oil
  • 3 Green Bell Pepper Finely Chopped
  • 3 Garlic Clove
  • 1 tsp. Cornish Sea Salt Flakes
  • Bold Bean Co. Queen Butter Beans
  • 1 tsp. Smoked Paprika
  • tsp. Cumin Seeds
  • 1/2 tsp. Coriander Seeds
  • Chopped Tomatoes
  • 1 Tbsp. Harissa Paste
  • handful Pickles
  • bunch Fresh Herbs Finely Chopped
